Kolkata, April 09, 2025: YAYAvar, the Indian regional concept restaurant at Hyatt Centric Ballygunge Kolkata, is set to take guests on an extraordinary culinary journey with an exclusive Bihari Food Festival curated by Regional Chef Rachna Prasad, food consultant and founder of Ambrosia Kitchen. Scheduled from April 11th-14th, this culinary celebration invites food enthusiasts to indulge in the rich, rustic, and authentic flavors of Bihar, thoughtfully crafted to showcase the region’s culinary heritage.

The festival menu showcases Bihar’s rich culinary heritage, highlighting indigenous spices and traditional cooking techniques through a thoughtfully curated selection of regional delicacies by Chef Rachna Prasad. Guests can savor the Bihari Set Menu, available in both Veg and Non-Veg options, starting with refreshing welcome drinks like Sattu Sharbat, Mattha, and Gud ka Sharbat. Starters include Phulauri and Shakarkand ka Tikki for vegetarians, while non-vegetarians can relish Machchali Saag Tandoor, Charpai Mutton Tikki, and Chulha Murga. The main course offers an array of flavorful dishes, from Godilla , Bharva Parval in the Veg Set Menu to Champaran Mutton, Sejana Murga, and Machchali Ghattsal in the Non-Veg Set Menu, paired with Sattu Paratha, Tehri, and Dhuska.

 

The Bihari À La Carte Menu provides an equally authentic experience with highlights like Dehati Murga, Aloo Baingan Kalaunji, and Makhana Dal, accompanied by traditional breads and rice. Meanwhile, the lavish dinner buffet features Bael Ka Sharbat,Ratalu Ki Sabzi, Boot Besani, Panch Phoran Dal, Marva Roti, Litti Chokha, and more, culminating in indulgent desserts such as Thekua, Ghujia, Makhana Kheer, and Malpua with Rabri. Each dish embodies Bihar’s rich cultural tapestry, crafted with locally-sourced ingredients and traditional spice blends to deliver a truly immersive and flavorful dining experience.
