Chennai, October 30, 2023:  Grand Chennai by GRT Hotels presents ‘Koshur Saal’ an exquisite food festival from Kashmir Ki Vaadiyan to the shores of Chennai at J Hind restaurant from October 26th to November 10th 2023. When one thinks of Kashmir, beautiful valleys, lakes bursting with colour from the gorgeous lilies and majestic snow-capped mountains come to mind. And it isn’t just the views that are to die for, the cuisine from the region is just as appealing as the scenery all around you.

 What makes Kashmiri food stand out is the mild flavours that play wonderfully with warm notes from ingredients such as cardamom, fennel, ginger, cloves and the magical saffron. Bringing this cuisine to the city is Chef Rahul Wali, who is preparing a special menu that will transport you to Kashmir ki vaadiyan. Chef Wali, originally from Srinagar, comes with over two decades of experience. Settled in Dehradun now, he has worked with both Indian and international hospitality brands, and gained recognition across the globe for his impeccable creations. Earlier this year, he won an award from the Indian Federation of Culinary Association for the revival of lost and regional cuisine, and his traditional Kashmiri fare is testament to his roots and talent. 

 This grand ‘Koshur Saal’, which means a traditional meal, will be available at J Hind at Grand Chennai by GRT Hotels. J Hind is famous for bringing flavours from across the country to the people of Chennai, and with a modern twist by using state of the art techniques. This dégustation menu will give those unfamiliar with the cuisine a unique insight into Kashmiri food and its culinary culture. 

 The menu has been carefully curated by this renowned chef, and includes some of Kashmir’s most iconic dishes, sans onion and garlic. Meat lovers can sink their teeth into some delectable Kabargah — mutton ribs sous vide and then shallow fried, served with red radish relish and walnut chutney. The Nadur Kebab is unlike any other kebab you may have tasted. These kebabs are made with smoked lotus stems and served with a delicious chutney. If you’re a fan of seafood, don’t miss the Buzith Gaad, a sizzling grilled fish with whipped radish foam and walnut chutney. 

 You can’t eat a Kashmiri meal without the iconic and beloved Yakhni. This rich, yogurt-based gravy is available in lamb, chicken or mushroom options, and is served with saffron rice, palak nadru and mini lavasa. The menu also features some mouth-watering desserts such as Saffron Phirni Tartlets and Mini Kahwa Gola. All this, while listening to some traditional tunes for a truly immersive experience.
