The menu is more than just a collection of drinks; it’s a homage to the ancient art of jaggery-making. Showcasing this ingredient’s remarkable diversity, Maverick and Farmer invites coffee lovers in Bangalore to experience India through this limited edition menu available at their Ulsoor, Koramangala and Cunningham outlets.

This menu isn’t a fleeting idea but the culmination of six months of travel, tasting, and perfecting. The Maverick & Farmer team scoured India’s jaggery heartlands—Karnataka, Kerala, Goa, West Bengal, and Maharashtra—to source five distinct types of jaggery, each with its own unique profile and a story rooted in heritage. With this selection, the goal was clear: to highlight the incredible flavor profiles of Indian jaggery, proving that not all jaggery is the same, and to offer a coffee experience that captures this range of flavors.

A Journey Through India’s Sweet Spots

The menu opens with the Kolhapuri Gur Flat White, a tribute to India’s most exported jaggery. Soft and candy-like with a velvety finish, this jaggery pairs beautifully with the Parama Dark blend. An almond milk flat white forms the base, elevated by a Kolhapuri Gur reduction and finished with puffed rice ‘chikki’ for a crunch that complements the smooth coffee.

From Maharashtra, the journey heads east to West Bengal, where Nolen Gur reigns supreme. Often called the queen of jaggery, this delicate date palm jaggery boasts nutty undertones and a thick, luxurious body. In the Nolen Gur Textured Milk Ristretto, Maverick & Farmer combines the jaggery’s natural richness with a ristretto shot, textured milk, and an ethereal foam infused with Nolen Gur, creating a drink that’s as decadent as it is balanced.

“Jaggery, with its deep sweetness, can easily overwhelm a coffee’s delicate notes,” adds Ashish D’abreo. “That’s why we’ve been deliberate in how we use it. Through techniques like jaggery foam, we’re able to introduce its complex flavors without letting it overpower the coffee itself.”

The South’s Smoky and Spicy Stories

Next comes the Marayoor Jaggery Cappuccino. This GI tagged jaggery is crafted using traditional techniques that involve burning bagasse, giving it a mild smokiness that’s distinct yet subtle. Maverick & Farmer accentuate these flavors with a touch of grilled Kerala plantain and a side of Sharkaraperratti—Kerala’s iconic jaggery-coated banana chips.

Goa’s Black Jaggery Nitro Brew introduces a bold, smoky edge to the lineup. Derived from coconut-sap jaggery, this rare and precious ingredient faces an uncertain future due to the declining toddy-tapper population. The nitro brew’s creamy microfoam extends the jaggery’s deep, intense flavor profile, offering a drink that’s simultaneously robust and refreshing.

Rounding out the menu is the Valebella Affogato with Jaggery Honeycomb Crumble, a love letter to Mangalorean palm jaggery. Known for its mild spiciness and distinctive disc-shaped presentation, Valebella pairs perfectly with the legendary Mangalorean Ideal ice cream. Topped with a palm jaggery honeycomb crumble, this affogato delivers a textural interplay that’s impossible to resist.
