Chennai, July 14, 2026: Hyatt Regency Chennai invites seafood enthusiasts and culinary explorers to experience “Shores on a Plate,” an exclusive coastal food festival at Spice Haat, celebrating the rich culinary heritage of India’s iconic coastlines. Taking guests on a flavorful journey across the Malabar Coast (17–19 July) and Chola Mandalam Coast (24–26 July), the festival is curated by Chef Renjith Jose and Chef Alaguraja, who bring generations of regional culinary traditions to life through authentic recipes and contemporary presentation.
The six-day culinary celebration showcases the distinct flavors, spices and cooking styles that define India’s vibrant coastal communities. Guests can savor an elaborate buffet alongside interactive live seafood grill stations, where the freshest catch is prepared to perfection, recreating the warmth and charm of seaside dining.
Chef Renjith Jose leads the Malabar Coast chapter of the festival from 17–19 July, presenting Kerala’s celebrated coastal cuisine through signature delicacies such as Malabar Prawn Curry, Syrian Beef Fry, and Meen Pollichathu. Rich coconut-based gravies, fragrant spices and time-honoured cooking techniques promise an authentic taste of the Malabar shoreline.
From 24–26 July, Chef Alaguraja takes guests through the bold and robust flavours of the Chola Mandalam Coast, featuring specialties including Chettinad Crab Masala and Coromandel-style Fish Curry, celebrating the culinary traditions of Tamil Nadu’s coastline with aromatic spice blends and regional recipes.
Complementing the menu, Spice Haat will be transformed with fishermen-inspired décor, rustic baskets and coastal-inspired elements, creating an immersive ambience that reflects the spirit of India’s shoreline. Curated beverage pairing add-ons further enhance the dining experience, making each meal a memorable culinary voyage.
