Ancient Grains, Timeless Curries: Southern Spice, Taj Coromandel Celebrates Forgotten Recipes of the South

New Delhi, July 06, 2026: Southern Spice, the iconic South Indian specialty restaurant at Taj Coromandel, Chennai invites connoisseurs of regional cuisine on a journey into South India’s rich culinary heritage with Forgotten Recipes of the South, a specially curated gastronomic experience. Celebrating recipes that have quietly faded from everyday kitchens, this limited-period culinary chronicle revives heirloom ingredients, time-honoured cooking techniques and cherished family recipes passed down through generations. Drawing inspiration from the culinary traditions of Tamil Nadu, Kerala, Karnataka, Andhra Pradesh and Telangana, this experience pays tribute to a time when ancient grains, stone-ground spices and slow-cooking methods defined everyday meals.

Guests can savour dishes prepared using indigenous millets such as little millet, kodo millet and barnyard millet including Thinai Paniyaram served with coconut-chilli chutney and the nourishing Ragi Mudde paired with Uppu Saaru, celebrating the wholesome simplicity of these forgotten grains. The menu also revisits rustic village curries under the Gramathu Kuzhambu section featuring Kalyana Veetu Paruppu Urundai Kuzhambu, with sun-dried lentil dumplings in tangy tamarind gravy; Kongunadu Pallipalayam Chicken, dry-roasted with shallots and red chillies on stone; Chettinad Kaalan Varuval with forest mushrooms and black pepper-kal paasi; Konaseema Chepala Pulusu featuring murrel fish; and Malabar Chemmeen Manga Curry with raw mango and coconut milk simmered in earthen pots.

Ancient rice varieties take centre stage with the aromatic Kaivara Samba Biryani cooked over woodfire; the wholesome Navara Kanji,  a medicinal red rice gruel with moong, coconut milk and shallots traditionally prescribed by Vaidyas; the flavourful Mapillai Samba Pongal enriched with country ghee and pepper; and the comforting Kuzhiyadichan Choru, a traditional claypot rice preparation layered with vegetables and roasted coconut.

No celebration of heritage cuisine is complete without traditional sweets such as the rich Kavuni Arisi Halwa prepared using black glutinous rice from Chettinad; and the wholesome Ragi Simili Urundai sweetened with palm jaggery and sesame.

Enhancing the experience is the warm ambience of Southern Spice, adorned with brass vessels, handwoven korai mats and the inviting aroma of cold-pressed oils.
