At an early stage, Chef Vicky became aware of food’s all-encompassing nature, his own culinary journey — working on ships, surrounded by 35 different nationalities exposing him to the global cuisines and 7 trips around the planet inculcating a worldly outlook within his food philosophy. This becomes apparent in his intelligently multifaceted signature style that sees the coming together of different influences. And at Omny Kitchen and Bar, it’s on full display, thanks to India-rooted dishes with a global twist.
“After spending a lot of time touring the world, I realised that every cuisine has something unique to offer; that there are overlaps in seemingly different cuisines; and if you pay close attention, it’s possible to create a rather robust offering that borrows from different cultures — not just make them coexist, but also make them shine. Now that I am back in India, it feels important to contextualise all that learning for the Indian palate. Every dish I create is an opportunity to merge what I’ve learned globally with the soul of Indian cooking and ingredients,” Chef Vicky observes.
Omny Kitchen was envisioned as a creative playground for the chef, and its interiors mimic a sanctuary — where passion takes flight. The design embraces a layered experience, harmonising organic forms and materials. Naturally aged steel meets the warmth of bamboo, crafting a seamless balance between industrial and natural aesthetics. Upon entering, guests are welcomed by an expansive open cooking station that gracefully merges into the bar, while an elevated lounge separates the dining area, offering a sense of intimacy and vibrant energy, equally.

Grilling, too, takes centre stage at the space with Chef Vicky’s childhood love for charcoal cooking bearing fruit in a grand display through an expansive show kitchen and two separate grills that facilitate various types of grilling, from skewers and direct-contact grilling to cooking on cast iron plates.
The menu comprises flavourful and intriguing options such as the Caesar Salad on Fire with charred market leaves and a vibrant The Bazaar, which changes with the availability of fresh produce daily. From the grill, there are exciting options like the Gambas Al Ajillo and the signature Filipino Chicken Adobo reimagined with a touch of smoke. One can also tuck into the knowing comfort of handcrafted pizzas and pastas. Chef Vicky’s Sindhi roots find expression in dishes such as the Tridali Dal with lentils, black garlic & cumin, Sindhi pakwan, chutneys, papads and the Braised Sindhi Lamb Shanks with morel and lotus stem bhuggal chawar. On the other hand, curries from near and far stand immortalised on the menu with offerings like the Millet & Barley Khichdi and Burmese Veg Curry. To top it off, there’s “The Burger Project By Vicky Ratnani”, where he elevates the classic burger with innovative combinations, including the spotlight: Jammu Tawi burger, featuring Jammu Kalari cheese in a perfect illustration of the chef’s ‘Indian Soul, Global Spirit’ vision.
