Bengaluru, March 15, 2025: Shangri-La Bengaluru presents an exclusive showcase of Murshidabad’s royal cuisine at Ssaffron from 19 March 2025 to 23 March 2025.This special pop-up, led by Chef Rehman Mujeebur, brings to the table a rich selection of dishes from one of India’s most historic culinary traditions, with a confluence of Mughal, Persian, Afghan, and Bengali culinary influences.

Murshidabad cuisine, one of the oldest in the country, includes both lavish meat preparations from the erstwhile royal kitchens of Nawabs and intricate vegetarian dishes shaped by the Sheherwali Jain community. The menu at Ssaffron features an array of meat-based specialities, including Bihari Boti, a slow-cooked mutton dish marinated with aromatic spices; Majlisi Kebab, delicately spiced melt-in-the-mouth kebabs once served at royal gatherings; and Murshidabad Gosht Stew, a rich and hearty slow-cooked lamb preparation. Rezaala, a fragrant Mughal-inspired mutton curry, and Murshidabad Murgh Pulao, a refined, saffron-infused rice dish with succulent chicken, are among the highlights.

Sheherwali cuisine, rooted in Jain traditions, brings forth bold and elaborate vegetarian fare. Dishes such as Chukander Dahi Harimirch Chaat, a beetroot cake served with sweet curd and mint coriander chutney; Mughlai Baigan Bhurta, roasted eggplants simmered with yogurt and spices; Paneer Aish E Anaar, cottage cheese in a rich pomegranate puree; Mutter Heeng Ke Asharfi, delicate potato shells stuffed with green peas and seared in ghee; and Khubani Paneer Tikka, paneer cubes infused with apricot glaze and a hint of chili, baked to perfection.

To conclude the meal, diners can relish Sewiyan Kheer, a saffron-infused vermicelli pudding; Shahi Tukra, crisp bread soaked in cardamom-scented syrup and topped with rabri; and Yaquti, a unique sweet dish known for its jewel-like appearance.
