New Delhi, July 24, 2022: Our chef was on a soul-searching journey across India. Starting right at the top, he decided to get in his car and experience life on the road. However, fate had a different plan for him when his car broke down. He hailed down a colourful truck that was passing by and asked for a lift.
Back on the road again, our chef soon grew hungry, and asked the truck’s driver to stop at a good restaurant. Laughing off his suggestion, the truck driver told him not to worry, and that he would show our chef the best roadside eateries along the way.
What followed next was a journey like no other. From the snow-capped mountains of Kashmir to the quiet, coastal life of Kanya kumari — our chef tasted it all! And what better way to experience the culture of a place than its local cuisine?
Inspired by this magical journey, our chef bid adieu to his trucker friends, thanking them for the rich experience. He returned home brimming with ideas, and thus, NH44 was born!
This specially curated degustation menu has local delicacies that have been given a modern touch through molecular gastronomy, nitrogen freezing, blowtorch roasting and other state-of-the-art techniques.
Start your flavourful journey with the famous Kashmiri Yakhni Shorba or a hot bowl of Himalayan Thentuk. Bite into Kadagu Yera (a South Indian Prawn dish) or Reshmi Kebab from the land of the Mughals to get you ready for the main course. Pair rich curries such as Manpaanai Kozhi Thokku (Kanyakumari-style chicken curry) and Lyodur Taschaman (Kashmiri cottage cheese gravy) with steaming hot rice or a variety of breads. End your meal on a sweet note with some Kesar Thandai Ice Cream or Karupatti Halwa (a perfect blend of rice flour, palm jaggery and ghee).
