Drawing from his Sri Lankan heritage and over three decades of experience in leading international kitchens, Chef Mario brings together authenticity and contemporary finesse.
Chef Mario’s distinguished career includes cooking for royal households, overseeing state banquets at Buckingham Palace and Windsor Castle, and contributing to major global events such as the London 2012 Olympics.
The brunch menu will begin with a superfood salad featuring pomelo, coconut vinegar, and turmeric. For the main course, guests can choose between roast truffle chicken ballotine with mushroom tartlet, cauliflower purée, and truffle jus, or a roast sweet potato and wild mushroom risotto. Dessert will include a sago and melon soup with saffron and coconut milk, paired with coconut ice cream and pistachio.
Adding to the experience, a dedicated live cooking station will serve Sri Lankan favourites such as kiri bath, king fish curry, lunu miris, and seeni sambal, freshly prepared for guests to enjoy.
