Elevating and showcasing modern Mexican gastronomy, Chef Colibrí brings a string of exciting dishes as part of the sit-down menu. This special dinner pop-up is brought to you by World on A Plate in association with Sanchez and will be available on the 21st of January, 2023.

Promising a culinary rendition of contemporary Mexican flavors, the menu highlights are dishes like the Lamb Birria Taco with strawberry Pico De Gallo for mains or seas the night with rustic Mexican-style rice topped with an eclectic range of seafood and much more, while rounding out each course with Chivas Regal – 12 YO, 15 YO, and 18 YO whisky pairings. Conclude your enthralling dinner with the well-known Sanchez Tres Leches dessert with Chef Colibrí’s twist, and captivate your evening with beats by the Latin music band, WJQ Trio.

Originally from Tepoztlán, Morelos, Chef Colibrí Jiménez has been in the industry for 15 years. She is the founder of the company ‘Aventura Gastronomica’ with the aim of promoting gastronomic-cultural tourism in Mexico. She is also a restaurateur at Maria Raiz, which encompasses the worldview of the cultural origins of Mexico. Chef Colibrí began her love for cooking at a very young age and was influenced by the culinary traditions of her maternal grandmother. At 18, she started training as a chef at the Franco-Mexican School of Gastronomy, graduating with Honors as the best student of her generation.
