  1. Quinoa Phirni

Ingredients:

  • Quinoa: 1 cup
  • Hot water: 1 cup
  • Dates: ¼ cup
  • Cardamom powder: 1 teaspoon
  • Skimmed milk: 2 cup
  • Almond powder: 1cup
  • Ghee: ½ tablespoon
  • Saffron strands: ¼ teaspoon
  • Sliver almonds and pistachio: 2 pieces each
  • Blueberries: 5-6 pieces

Method:

  • Heat ghee on a sauce pan
  • Once the ghee become warm add quinoa to it. Roast the quinoa till it become light brown add one cup hot water and bring it to boil
  • Once the water is reduce to half, add 2 cups of hot milk in it and add saffron strands to it
  • Let the quinoa and milk mixture come to boil reduce the flame let it simmer for 7 to 8 minutes till perfectly cooked
  • Add dates, almond powder and cardamom powder stir well and cook
  • Serve hot or cold, garnish with nuts and blueberries
  1. Multigrain Laddoos 

Ingredients:

  • Multigrain flour: 2 cups
  • Jaggery: ¼ cup
  • Desi Ghee: 1tbsp
  • Cardamom: 2pcs
  • Roasted almond: 4pcs

Method:

  • Heat the ghee, fry the multigrain flour till it gets golden brown, set aside to cool
  • Melt the jaggery in ¼ cup of water, once the jaggerymelts add the roasted multigrain mix in it with cardamom. There should be no lumps.Add the nuts
  • Grease the hand with the ghee and make the ball when the mixture is warm.
  • Rest till cool
  1. Apple Basundi 

Ingredients:

  • Milk: 500ml
  • Saffron: 7 Strand
  • Cardamom powder: ¼ tsp
  • Freshly grated apple: 1 cup
  • Chia seed: 1tsp
  • Jaggery: 5gms
  • Lime juice: ½ tsp
  • Almond: 2 pcs

Method:

  • Bring the milk to boil, reduce the heat cook it on lower flame for 1hrs
  • Melt the jaggery then again cook the milk for 25 min till the milk thicken like Rabdi
  • Add the cardamom power and cooked grated apple and chia seed in the thicken milk.
