New Delhi, July 14, 2018: Chef Sheriyar Dotivala recently took the helm as the Executive Chef at The Resort, Madh-Marve.With over 16 years of culinary experience, Chef Dotivala brings a dynamic and innovative energy to The Resort’s varied culinary scene. His passion to continuously learn and explore his craft has resulted in an impressive career spanning various stints that include working for sterling hotels such as the ibis Navi Mumbai, ibis Mumbai Airport, Holiday Inn, Mumbai and The Taj Mahal Hotel, Mumbai.

Chef Dotivala began his culinary journey with Shamiana — the all-day dinning coffee shop at Mumbai’s iconic The Taj Mahal Hotel. Among the many assignments he handled there was planning a continental five-course spread and special plated dishes for a sit-down dinner for up to 500-600 covers including one for the Israel Philharmonic Orchestra for the Mehli Mehta Foundation and Rolex Watches.

From the Taj Mahal Hotel, Chef Dotivala moved to Holiday Inn Mumbai as Sous Chef where he was overall in charge of the main kitchen and was responsible for inventory and food cost, launching new menus, conducting regular demonstration classes for staff and creating innovative menu for special occasions among other things. During this time, he also successfully completed the ISO22000 Certification and Craft Training Certificate (CTC). His next assignment was at ibis Mumbai Airport as Executive Sous Chef where he handled Client Servicing, Quality Assurance/ Compliance and Man Management. He then moved to ibis Navi Mumbai taking over as Executive Chef. At this property, Chef Dotivala was in charge of diverse responsibilities including managing the overall profitability of operations with strategic utilization and deployment of available resources.

Known for his astute knowledge of the food industry, Chef Dotivala holds an excellent track record of managing budgets and resources to facilitate streamlined operations. He boasts of a vast experience in developing and following excellent service standards and operational policies while planning business strategies.

Chef Dotivala has completed a Diploma in Hospitality Management and Catering Operations from Rizvi College of Hotel Management and Catering Technology Mumbai. He also holds a Diploma from the American Hotel and Motel Association.

At The Resort, Chef Dotivala plans to introduce a range of new fares with local flavours and fresh ingredients to create the ultimate dining experience.
